These two holiday recipes are sure to delight your friends and family.

Texmati Pecan Rice Stuffing

3 cups cooked Texmati white or brown rice

1/4 cup margarine

3/4 cup chopped onions

3/4 cup chopped celery

1/2 cup chopped pecans, toasted

1/4 cup chopped Parsley

1/2 teaspoon salt (or to your taste)

1/4 teaspoon pepper

1 teaspoon poultry seasoning (or as needed)

In large skillet, sauté onions and celery in margarine until tender. Stir in remaining ingredients, mixing well. Place in a casserole and cover with a tight-fitting lid. Bake at 375° for about 15-20 minutes.

Cranberry Pecan Rice Pilaf

2 tablespoons butter/margarine

1 cup uncooked Texmati white rice

1 3/4 cups chicken broth

1 cup grated Parmesan Cheese

1/2 cup dried cranberries

1/2 cup chopped pecans, toasted

1/4 cup chopped green onions

Salt and ground black pepper to taste

Over medium heat, melt butter in a 2-quart saucepan. Stir in the rice and cook for 2 to 3 minutes. Heat broth until boiling. Stir once or twice. Reduce heat to low; cover the pot and let it simmer for 20 minutes, or until all liquid has been absorbed. Take off the heat. Stir in cheeses, cranberries, pecans, and onions. Season with salt and pepper.
