Yum Yum Veggie Sliders

1 can black beans (drained, rinsed).

1/2 small red bell pepper (1/3 cup small die)

1/2 cup small onion (1/3 cup small die)

1 stalk celery (1/3 cup small dice).

3 cloves garlic (peeled, diced)

1/3 cup California raisins (finely chopped).

1 egg

1/2 teaspoon salt

1 teaspoon chili powder

1/2 teaspoon chipotle powder

2 teaspoons cumin

3/4 cup bread crumbs

1/2 cup quinoa cooked and cooled

For grilling, heat an outdoor grill to high heat and lightly oil a sheet aluminum foil. Lightly oil a baking sheet and heat oven to 375°F. Make a thick paste of the black beans by mash them in a medium bowl. Mix finely chopped bell peppers, onion, celery and garlic in a small bowl. Stir into mashed beans.

Stir egg, salt and chili in another bowl. Mix the egg mixture with the mashed beans. Add bread crumbs and quinoa to the mixture until it becomes sticky. Divide into small patties. Makes 12 patties.
