Grilled Catfish over Mixed Greens

Serves four

4 U.S. Farm Raised Catfish Fillets (4-6 oz each).

1/4 cup extra-virgin Olive Oil

1 1/2 tablespoons balsamic Vinegar

3 tablespoons dried tarragon

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

4 cups mixed green salad leaves, washed and dried

4 ounces thinly sliced white mushrooms

Place fillets onto a plate. Combine olive oil and vinegar with tarragon, salt, and pepper in small bowl. Blend until well-combined. Spread two-thirds the marinade on the Catfish. Place the marinade on top of the fish and cover with plastic wrap. Refrigerate for 30 mins. The marinade can be used as a salad dressing.

Prepare a grill or heat the broiler to 500°F. Place Catfish fillets in a greased broiler pan or grill rack. For two to three minutes, grill or broil the fish four inches away from the heat source. Let cool. Serve warm
