Prosciutto & Goat Cheese Roulades

Serves 8

Ingredients:

8 ounces mild goat milk

2 tablespoons minced fresh Parsley leaves

1 small clove minced garlic

4 oz prosciutto. Cut into 12 pieces. Next, cut each piece in half to create 24 strips. Each strip measures 3 by 1 1/2 inches.

1 tablespoon olive oil

1 tablespoon of lemon juice from 1 small lime

Ground black pepper

Instructions

Combine goat cheese with parsley and garlic in a small bowl. Mix until well combined. On each slice of prosciutto, place about 2 tablespoons of the mixture. The cheese mixture should be folded over each slice. Once the cheese mixture is covered, fold one end over to form a roll. Spread the rolls on plates and add olive oil, lemon juice and pepper to taste. Serve at room temp.
