Grilled Citrus Rosemary Catfish

Four servings

For the catfish

4 U.S. Farm Raised Catfish Fillets

Half a fresh lemon per fillet

Citrus Sauce

Zest of one lemon

One lemon is all you need

Zest of one Orange

One lime, one juice

6 ounces pineapple juice

1/2 cup brown sugar

1 tablespoon fresh rosemary chopped

1/4 teaspoon salt

1. Preheat grill.

2. Mix all ingredients together in a small pan. Bring to a boil. Then reduce heat. Simmer five minutes.

3. Place the catfish in an individual dish. Salt and freshly ground black pepper are a good addition. Allow to sit for five minutes.

4. Grill the catfish fillets, skin-side up, for 3-4 minutes. Turn the fillets over and continue grilling for another two-three minutes.

5. Place catfish on a plate and then spoon warm citrus sauce over each fillet.
