Catfish Almondine
Serves 2
Ingredients:
2 Fillets of U.S. Farm-Raised Catfish
2 tablespoons butter divided
1/4 cup slivered almonds
1 lemon, zested & juiced
Directions
1) Heat one tablespoon of butter in large skillet over medium heat. After the butter has melted place the catfish fillets on a plate and cook for 4 minutes or until nicely browned.
2) Flip the fillets. They can be cooked for another four minutes until they become golden and flaky. Set aside the fillets.
3) Add the rest of the butter to your skillet. Add the almonds and lemon juice. Allow the almonds to cook for about one minute or until they are golden brown.
4) Place the fish on a plate, and then serve the almondine sauce over them.
