Grilled U.S. Farm Raised Catfish with Spicy Feuerworks Rub
Serves 4
This recipe makes enough spice mix to make enough spice rub for you to use throughout the season.
1/4 cup chili powder
1/4 cup ground cumin
1/4 cup ground coriander
2 tablespoons of packed brown sugar
1 tablespoon salt
1 tablespoon red pepperflakes
2 tablespoons freshly ground black Pepper
4 fillets of U.S. Farm-Raised Catfish, 6-8 oz each
Vegetable oil spray
Broiler or grill on high heat.
Mix spices in a bowl and then pour into a glass container with a tight fitting lid to make fireworks rub.
Use vegetable oil to lightly coat the fillets of catfish.
Each lightly oiled catfish filet should be coated with 1 teaspoon of fireworks rub. Broil or grill the fillets on high heat for 3 1/2-4 minutes or until they begin to flake when tested using a fork.
Notice: The fireworks rub can be stored in a dark cabinet, away from heat. It will last for up to three months.
