MONTE CRISTO SKILLET CORNBREAD

Serving Size: 6

1 (6 oz.) package Martha White Cotton Country™ Cornbread Mix

Crisco Original Non-stick Cooking Spray

1 1/2 cups chopped turkey

1/2 cup chopped cooked ham

1 1/2 cups shredded Swiss Cheese

4 large eggs

1 cup milk

2 tablespoons mayonnaise

2 tablespoons honey mustard, divided

1 1/2 teaspoons salt

1/2 teaspoon pepper

1/2 cup Smucker’s ® Currant Jelly

Powdered sugar

1. Make cornbread according to the package instructions. Bake in a Lodge cast iron skillet (10 1/2 inches). Cornbread will be thin. Cool the cornbread in a skillet and then cut it into cubes. Spray no-stick cooking oil liberally on the skillet.

2. Turn oven on to 350 degrees F. Cornbread cubes can be placed in a skillet. Add turkey, ham, and cheese to the skillet. Mix eggs, milk and 1 tablespoon honey mustard in a medium bowl until smooth. Spread evenly on skillet. Bake 30 to 35 mins or until lightly browned.

3. Heat currant jelly slightly to melt. Mix 1 tablespoon honey mustard with the currant jelly.

4. Take skillet out of the oven. Cut into wedges and sprinkle with powdered Sugar. Serve with mustard sauce and currant jelly.
