One-Pot Creamy Noodles with Bacon & Peas

8 oz bacon, diced

12 oz No Yolks Extra Broad Noodles

2 cups diced onion

3-1/2 cups of low-sodium chicken broth

3/4 cup half and half

1 cup frozen peas

1/2 cup grated Parmesan cheese

1 Tbsp lemon Juice

Salt and ground black Pepper, to your taste

1. Heat large deep skillet over medium-high heat. Cook bacon until crispy and golden, stirring occasionally. Transfer to a paper towel-lined plate.

2. All but 2 tablespoons of grease should be thrown out. Stir in onions and cook for 5-10 minutes, or until tender and golden brown.

3. To the skillet, add broth, half and one, and uncooked noodles. Bring to a boil. Reduce heat to medium low and simmer covered for 8-10 minutes or until noodles are tender. Stir frequently while the noodles are simmering.

4. Add salt and pepper to taste and mix well. Cook the peas, Parmesan cheese, bacon, and lemon juice in a skillet for 2 minutes more or until heated through.
