Crisps with Chocolate Praline Toffee
Produces 48 crisps
12 whole graham crackers
1 cup packed brown sugar
1 cup butter
1 tsp double-strength vanilla
2 1/2 cups chopped coarsely pecans
1/4 cup semi-sweet chocolate morsels
1/4 cup white chocolat morsels
1. Preheat oven to 350 degrees Fahrenheit. Place crackers side-by-side in a large baking pan. In a 3-quart saucepan, combine brown sugar, butter, and vanilla. Stir occasionally and bring to a boil on medium heat. Cook sugar mixture for 4 minutes, stirring continuously.
Before adding the pecans, make sure the sugar mixture is boiled for 4 minutes. If you are using a candy thermometer to check the temperature, it should reach 244 degrees Fahrenheit before the topping can be added.
2. Stir in the pecans. Spread the sugar mixture evenly over the crackers. Bake for 10-14 minutes, or until sugar mixture bubbles and pecans are lightly toasted. Cool the pan on a rack.
3. Microwave semi-sweet chocolate morsels in a bowl on high for 30-60 seconds. Stir after each interval of 20 seconds. Place resealable plastic bag into a cup. Place chocolate in the bag. Trim corners to allow chocolate to flow freely. Sprinkle chocolate over crisps. You can repeat the process with white chocolate morsels. Let the chocolate set for at least 30 minutes.
4. Divide into 24 pieces. To make triangles, cut the squares in half diagonally. After the chocolate is set, wrap the crisps in parchment paper and store them in an airtight container.
