Butterflied Leg of Lamb
125g almonds (roasted, chopped).
3 cloves of garlic (peeled).
1 teaspoon paprika
2 tablespoons cumin, coriander (roasted)
1/2 teaspoon chopped dried chili
1 tablespoon brown sugar
1/2 cup Olivado Extra Virgin Avocado Oil
Grated rind/juice one lemon
Blend the first seven ingredients until they are well combined. Avocado oil, lemon juice and rind should be added. Apply the mixture to both ends of the leg.
Place the rubbed leg with its cut side up on a rack set over a tray. Bake at 190°C for 15 minutes. Turn the lamb over and roast for 15-20 minutes more or until cooked to your preference. Let the lamb rest in a warm area for about 10-15 minutes before carving.
