Pears are an easy, healthy treat that can be taken with you, and they make a great addition to both sweet and savory dishes. This recipe for a family-friendly winter meal that is budget-friendly and delicious, includes crunchy pear leaves wrapped in chicken and protein-rich ground chicken.
Ingredients:
* 1 tablespoon cornstarch
* 2 tablespoons peanut oil
* 1 tablespoon minced garlic
* 1-1/2 tablespoons grated ginger root
* 6 scallions, thinly sliced, green and white parts separated
* 1 pound ground chicken, dark meat
* 1 tablespoon chili sauce
* 2 tablespoons hoisin sauce
* 2 tablespoons soy sauce
* 1 USA Pear, such as Red Anjou or Bosc, peeled, cored and cut in matchsticks
* Toasted sesame oil to taste
* 12 large tender lettuce leaves, such as bib, butter or red leaf
* Cilantro sprigs
Directions
Combine the cornstarch and three tablespoons of water in a small bowl. Mix until smooth. On medium heat, heat the peanut oil in a pan or wok. Stir fry the garlic, ginger and white parts from the scallion for 2 to 3 mins. Cook the chicken for 8 minutes, stirring often, until it is broken into small pieces.
Stir in the hoisin sauce, chili sauce, and soy sauce. Mix well and distribute evenly. Mix in the reserved cornstarch syrup and stir to combine. Finish the dish with the reserved scallion greens and pear matchsticks.
To serve:
A heaping tablespoon of filling should be placed in the middle of each leaf of lettuce. Add a few cilantro leaves if you like. Wrap the lettuce around all of the contents.
