This recipe is for Oven-Baked Catfish cakes with Lemon-Caper Sauce. The cakes provide a filling, comfort-food dish and are still fancy enough to impress guests as either an entrée or appetizer.

Oven-Baked Catfish Cakes With Lemon-Caper Sauce

Four servings

Catfish cakes:

1 lb U.S. Farm Raised Catfish Fillets, cooked

1 1/2 cups mashed potatoes

1/4 cup chopped red onion

1/4 cup chopped red bell pepper

1 teaspoon chopped fresh parsley

1 tablespoon Creole mustard

1/2 teaspoon chopped capers

1/2 teaspoon salt

1/2 teaspoon onion powder

1/4 teaspoon hot Sauce

1 cup breadcrumbs

1/4 cup olive oil

Lemon Caper Sauce:

2 tablespoons mayonnaise

1 tablespoon Creole mustard

1/4 teaspoon Cajun seasoning

1 tablespoon chopped capers

1 teaspoon hot sauce

1 tablespoon chopped red onion

1/2 lemon juice

Directions

1) Combine all ingredients in a bowl and mix well. Set aside.

2) Turn the oven on to 350 degrees Fahrenheit

Mix all the ingredients for the catfish cake, except the olive oil. The mixture should be formed into equal-sized cakes. Breadcrumbs can be used to coat the cakes.

4) Heat olive oil on medium heat in a skillet. Cook the catfish cakes on both sides for 2 minutes.

5) Transfer the catfish cakes on a greased baking tray. Bake the cakes for about 15 minutes.

6) Take the catfish cakes out of the oven and place them on a platter. Serve with Lemon Caper Sauce, fresh lemon wedges, and garnish.
