Disney World Swan & Dolphin Resort in Orlando, Fla., suggests pairing his arancini with Arancio Nero D’Avola.

ARANCINI

1 small shallot finely chopped

2 tablespoons butter

8 ounces arborio rice

1/2 cup white wine

1 quart chicken stock

2 tablespoons pesto

4 diced sun-dried tomatoes

1 thick slice of bufala mozza-

rella, quartered

2 ounces parmesan cheese

1 egg

3 ounces Italian-style bread crumbs

3 ounces All-purpose Our

In a saucepan over medium heat, sauté shallot with butter until softened, then add rice and cook 5 minutes. Stir in the wine. Slowly add chicken stock to the hot mixture. Cook for about 20 minutes, stirring occasionally.

Mix in pesto and parmesan cheese. The rice should feel and look firm to the touch. Let cool. Scramble egg in a bowl. Add 2 teaspoons water.

Divide rice into 4 balls. In the middle of each ball, place a sun-dried tomatoes and a piece mozzarella. After rolling each ball, coat it with flour and then add egg wash. Finally, roll in bread crumbs. In a large saucepan, heat oil. Once oil is hot, heat the oil and fry the rice balls until they are golden. You can also serve it with tomato sauce.
