Makes 20 servings
1 wheel Brie cheese (about
two pounds), chilled
1/4 cup California Raisins
1/4 cup port wine
1 egg yolk
1 tablespoon water
2 tablespoons toasted Pecans
1 sheet puff pastry, frozen
Boil port wine with raisins in a saucepan. Remove from heat and let cool. Mix egg yolk and water together in a small bowl.
Separate Brie by dividing it into two layers. Combine chopped raisins and toasted pecans. Spread evenly on bottom layer. Cover the top layer of Brie with the second half. On lightly floured surfaces, roll out puff pastry until it is large enough to completely cover Brie. Fill Brie with the dough. Wrap Brie around it, sealing any edges with egg wash. Spread the Brie on a parchment-covered baking sheet. Let cool in the oven for 30 minutes.
Pre-heat oven to 400 degrees F. Bake for 20-30 minutes, or until golden brown. Allow to stand for a while before serving with baguette slices, or toasted crumpets.
