Families looking for affordable meals have good news as Americans continue to see gas and food prices rise. Although grocery bills, restaurant bills and fast food meals can add up quickly, there are resources that families can use to make nutritious, affordable meals at home.

Deluxe Cheeseburger Salad

Serves 6

4 sesame seed hamburger buns

1 small red onion, cut in half

2 plum tomatoes

3/4 lb 95 percent lean ground meat

1/2 cup finely chopped pickles

3/4 cup ketchup

1 tablespoon yellow mustard

8 cups romaine lettuce thinly sliced

1 cup shredded cheddar cheese

Preheat oven to 425 F. Slice bun tops into 1/4-inch strips. Place the buns on a single layer on an oven-safe plate. Bake them for 8 to 10 minutes. Let the buns cool.

Cut half the onion into thin rings with a mandoline. Slice tomatoes crosswise into quarters. In a sauté pan, cook the ground beef over medium-high heat for five to seven minutes, or until the meat becomes brown. The beef should be broken into pieces. Chop the onion. Finely chop pickles. Mix the onion, pickles and mustard together in a large bowl. Mix in the ground beef.

Place the lettuce on a platter and then spread the beef mixture over it. Add cheese, tomatoes, and sliced onions to the salad. Place the toasted hamburger buns on the edge of your plate.
