U.S. Farm-Raised Catfish Ranchero
(Serves four).
4 fillets of U.S. Farm-Raised Catfish (4 to 6 oz. Each)
1 cup finely chopped tortilla chips
2 teaspoons chili Powder
1/2 teaspoon salt
1/2 teaspoon ground pepper
3 tablespoons lime juice
1 tablespoon vegetable oil
1 cup of your salsa
1/4 cup fresh cilantro, minced
Pre-heat the oven to 450 F. Lightly grease a baking sheet. Split the catfish fillets into half. In a shallow dish, mix the crushed tortilla chips with chili powder, salt, and pepper.
In a shallow dish, combine the oil and lime juice. Dip the catfish and coat them in the lime mixture. Place the fillets onto a baking sheet. Sprinkle the fillets with the rest of the tortilla crumbs.
Bake the catfish for 8-10 minutes or until it flakes easily when tapped with a fork.
The salsa can be warmed in a small saucepan on low heat. Spread the salsa on the catfish fillets and arrange them on a platter. Sprinkle the catfish on a serving plate with fresh cilantro.
