Grilled Catfish with Avocado Sauce and Roasted Peppers

Four fillets of 7-ounce catfish

Olive oil

Salt and pepper

Avocado Sauce:

1 large avocado. Peel, pit and cut into 1/2-inch cubes

1 teaspoon fresh lemon Juice

1 tablespoon mayonnaise

1/4 teaspoon salt

1/4 teaspoon cayenne

1 hard-boiled egg, peeled, and chopped

1 cup chopped and toasted

pecans (optional)

Mix all ingredients, except the pecans. Reserve for garnish

2 red bell peppers

1. Place peppers on a hot grill or on a gas flame on the stove. The peppers should be charred on all sides. Put the peppers in zip-top bags and steam them for 5 minutes.

To Serve:

1. Use oil to brush catfish fillets. Season with salt. Turn the grill to high heat and oil the grill surface.
