UNO Lobster Roll – Tarragon Mayonnaise & Bacon

Four servings

4 New England-style hot dog buns (top split)

4 tablespoons unsalted butter softened

Lobster salad (recipe below)

1/2 cup tarragon mayonnaise

(recipe follows)

8 strips of fully cooked bacon, cut in 1/2-inch pieces

4 green leaf lettuce leaves werehed and dried. Then shredded.

4 Dill Pickle spears

French fries and potato chips

1. Over medium heat, heat a 10-inch skillet. Each hot dog bun should be coated with 1 tablespoon butter (1/4 on each side). Toast the buns in a hot, dry pan for about 30 seconds. Cook the other side for 30 seconds. Turn off the heat.

2. 2. Evenly distribute the shredded lettuce within each bun.

3. Spread the bacon pieces evenly over the lettuce.

4. Spread the lobster salad evenly on the buns. Serve the lobster salad on a bed of pickles, French fries, or potato chips.

Tarragon Mayonnaise

1/2 cup mayonnaise

1 tablespoon fresh Tarragon

To taste, kosher salt

Fresh ground pepper to your liking

Mix all ingredients in a stainless-steel bowl. Set aside.

Lobster Salad

1 1/4 lbs fully cooked lobster meat

1/2 cup tarragon mayonnaise

Mix the lobster and tarragon mayonnaise together in a stainless-steel bowl. If you don’t want to use it immediately, wrap the mixture in plastic wrap and place it in the refrigerator.
