Butter Lettuce, Fruit

Salad with Creamy Lemon Dressing

Serves four

2 heads butter lettuce

1 15-ounce can Libby’s Sliced Peaches in Pear Juice concentrate

1 15-ounce can Libby’s Sliced pears in Pear Juice concentrate

1 6-ounce low-fat lemon yogurt

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup toasted halves of pecans

2 tablespoons chopped chives

Take out the outer leaves. Each head should be cut in half, starting at the stem end. To rinse the halved heads, soak them in cold water. To remove excess water, shake the lettuce.

Remove the core from the lettuce. Place the leaves into a large bowl. Add the peaches and the pears to a large bowl. Add the reserved juice to the yogurt and season with salt and pepper.

Toss the fruit and lettuce with the yogurt mixture. Toss the lettuce in a large salad bowl, or on four salad plates. Place the fruit on top. Add pecans and chives to the salad.
