It doesn’t take long to cook a delicious meal on the barbecue.

This is a quick and easy recipe from The Pampered Chef, and their new book. “Grill it Quick.”The entire process takes just 30 minutes and can be done on any night of week.

Chipotle-Rubbed Beef Filets

Start the potatoes first and then the steaks. Finish the potatoes while the steaks rest.

Sweet Potatoes

2 medium sweet potatoes

1/2 cup milk

2 tablespoons butter

1/2 teaspoon salt

1/4 cup sour cream

Optional: Green onion curls

Steaks

4 beef tenderloin filets, each about 1/2 inch thick

1 tablespoon vegetable oil

2 tablespoons chipotle butter

Grill on medium heat

To pierce potatoes with a fork, use a fork to pierce the skins. Place on a microwave-safe plate. Microwave potatoes in the microwave on HIGH for between 14-16 minutes until potatoes become tender. Let potatoes cool on a cutting board. Combine milk, butter, and salt in a measuring cup. Microwave on HIGH for 1-2 minutes or until hot. Add milk mixture, mash until smooth. Cover, and set aside to keep warm.

In the meantime, coat steaks in oil. Apply rub to meat. Cover steaks and grill for four minutes, or until grill marks are visible. Turn steaks with tongs. Grill for 4 to 6 minutes, or until the thermometer registers 140 Fahrenheit or 150 Fahrenheit for medium rare. Transfer steaks to a serving platter. Cover the grill with foil and let rest 10 minutes.

Cut green onion into thin slices and combine it with the sourcream in a small bowl. Serve steaks with potatoes. Top with the sour-cream mixture. If desired, garnish with onion curls. Four servings.
