Red Raspberry Mousse

1 frozen raspberry package of 10 ounces

1 tablespoon of lemon juice

1 cup heavy Cream

1 egg white

1/4 cup sugar

Four 6-ounce ramekins should be lined with parchment or wax paper. Make four 10-inch-long strips from wax paper/paragraph paper that are slightly longer than the ramekin. Then line the sides of the Ramekins by overlapping their ends.

Blend raspberries in a food processor until smooth. Add lemon juice.

In a large bowl, beat cream until stiff peaks form. Mix in the raspberry mixture.

Beat the egg white in a separate bowl until it forms stiff peaks. Add sugar to egg white, and beat until it is dissolved. Combine with raspberry mixture.

Combine in ramekins and smoothen the tops. Then freeze.

Pour the mousse into the molds and let it sit for 5 seconds in hot water. Then, rinse off with cold water.

Place sauce on a plate. Allow to stand at room temperature for 10 min before serving.
