Yes, most premium Sardinines do indeed have bones. These bones melt during processing and are why they have more calcium per ounce than a glass or milk. They do have scales but they are too small to be noticed. Many people aren’t convinced that sardines are sustainable and provide a wealth of vitamin D, protein, calcium and Vitamin D.

Sardine makers, including King Oscar from Norway, offer what is also known as “skinless and boneless”Sardines are a potentially game-changing fish.

John Engle is the president of King Oscar USA. He says that skinless, boneless sardines can be considered a whole new category of fish. “Skinless and boneless sardines are actually an entirely different species of fish from our traditional ‘brisling’ sardine. They’re slightly larger, and fished from different waters, which allows us to remove the skin and bones from the fish and bring a totally different taste and texture to the can, qualities very similar to tuna.”

It allows sardine manufacturers to experiment with new flavours and even recipes. King Oscar’s Spanish-Style Sardines, for example, are caught off Morocco’s coast and mixed with olive oil, red bell peppers, pickled cucumbers and carrot. This gives a new spin on an old food and could even change the perception of sardines.

“People eat seafood in a can by the millions — just look at tuna,”Engle. “I think that by introducing new varieties of skinless and boneless sardines, it’ll open up the possibility of eating sardines to people who have heard that they’re good for you, but who just haven’t been able to get past the ‘yuck’ factor.”
