Yum Yum Veggie Sliders

1 can black beans, drained and rinsed

1/2 small red bell Pepper, 1/3 cup small dice

1/2 small onion, 1/3 cup small dice

1 stalk celery (1/3 cup small dice).

3 cloves garlic (peeled, diced)

1/3 cup California raisins (finely chopped).

1 egg

1/2 teaspoon salt

1 teaspoon chili powder

1/2 teaspoon chipotle paste

2 teaspoons cumin

3/4 cup breadcrumbs

1/2 cup quinoa cooked and cooled

Grilling: Heat an outdoor grill to high heat. Lightly oil aluminum foil. Lightly oil a baking sheet and heat oven to 375°F. Mix the black beans in a large bowl until they are smooth and creamy. Blend finely chopped bell, onion, celery, garlic, and California raisins in a small bowl. Stir into mashed beans.

Stir together the egg, salt and chili in a small bowl. Mix the egg mixture with the mashed beans. Add bread crumbs and quinoa to the mixture until it becomes sticky. Divide into small patties. Makes 12 patties.
