People with celiac disease may find it difficult to go out to eat.

Celiac disease affects 1 percent of Americans. This is an autoimmune condition that causes damage to the linings of the intestine. Gluten must be avoided in all foods, including bread and soy sauce. Celiacs often eat in.

Some restaurants have taken steps to make it easier for celiacs to eat at their establishments. UNO Chicago Grill, for example, recently launched a gluten-free menu. The menu includes fish, pizza, steaks and salads. The most popular item is UNO’s Gluten-Free Pizza.

UNO’s gluten-free pizza can be made with a thin crust. It is available in cheese, pepperoni, and veggie options.

“Pizza is our signature product, and we wanted to offer a gluten-free pizza so all of our guests could enjoy it when dining at UNO,”Frank Guidara, UNO CEO, notes.

If a celiac eats a piece of regular pizza they may experience nausea, vomiting and skin rashes. If not diagnosed, celiac disease may lead to severe illness such as anemia, liver diseases and intestinal damage.

“Because of these serious symptoms, it has historically been very difficult for celiac sufferers to dine out,” Guidara said. “It is time for that to change, and we hope others will follow suit in developing their own gluten-free menus. Everyone benefits when that happens.”
