Cinco de Mayo, the commemoration of the Battle at Puebla, is often marked by fiesta-inspired gatherings as well as a feeling of independence. What fiesta is complete without traditional Mexican food?

Lightened-up Pulled Pork with California Raisins

Prep time 20 minutes

Cook time: 5-10 hrs

Serves 8-10

5 lbs. Very lean and boneless pork loin roast

1 tablespoon chili powder

2 1/4 teaspoons ground cumin

1 1/4 teaspoons each: salt, cinnamon, and oregano

1 (28-oz.) 1 (28-oz.) can crushed tomatoes

1/3 cup lime juice

2 medium chopped onions.

3 cloves minced garlic

1 cup California raisins

5 dried ancho/pasilla chilis, with stems and seeds removed. Torn into strips

Reduce fat from pork and cut into 2 inch cubes. Mix dry seasonings together in a small bowl. Sprinkle over pork and turn to coat. Combine tomatoes, lime juice one onion, one clove garlic, and one tomato in a large slow cooker. Cover with raisins and pork. Cook on high for 5 hours, or low for 10 hours.

Place meat in slow cooker using a slotted spoon. In a medium saucepan, combine juices from the slow cooker. Add the rest of the onion, garlic, dried pepper, and heat to boiling. Reduce heat to low and simmer for 20 minutes stirring occasionally. Let cool down, then blend or process in a food processor. Two forks are enough to shred the pork. Add half of the sauce and stir. Spread the remaining sauce on top of the pork and place in tortillas.
