Many health nuts believe cheese is taboo. However, cheese can be a healthy part of any healthy diet. Cheese has more calories and fat than celery sticks. However, cheese is rich in nutrients that you might like to include in your diet, such as B vitamins and calcium.

You can choose cheeses with big flavor to eat less but still be satisfied. Feta cheese is a great example of this.

A little goes a long way with flavor. The cheese is delicious. In fact, Président Crumbled Feta (www.PresidentCheese.com) won the 2008 ChefsBest award, a prize given by an independent judging organization that tests America’s best food products.

For a more flavorful breakfast add feta cheese.

Greek Gourmet Omelet

2 portions

Ingredients:

1 3.5 ounce Président Crumbled Plain Feta

3 tablespoons Président Normandy Butter

1 cup torn fresh spinach leaves

4 eggs

Salt and pepper to your liking

1 tablespoon cream

1/2 clove garlic

First prepare the omelet filling. Wash and dry the spinach leaves. Melt 1 tablespoon butter in a large skillet. Mix the butter with the spinach. Stir to coat. Once the spinach is wilted remove it from the pan and set it aside.

Season the eggs with salt and pepper in a bowl. Mix the cream with the eggs and beat them gently with a fork until they are well combined. Set aside.

The cut side of the garlic clove should be used to rub the omelet pan. The butter should start to melt when the pan is heated on medium heat. The remaining butter should be added. Once the butter has melted, add the eggs. As if you were mixing eggs, quickly stir them for a second or so.

Once the eggs have set, lift them with a fork. This will allow the liquid to run underneath the eggs. Keep doing this until the eggs no longer seem runny but remain soft and moist. Place the cooked spinach into the omelet. Next, sprinkle the feta cheese all over the spinach. The eggs will be loosened if you shake the skillet. Fold the omelet in half and remove the skillet from the heat. Serve.

For a perfect presentation, drizzle a bit of butter on top of the omelet. Then garnish it with a tablespoon of feta, a few rings black olives, and another tablespoon of butter. Optional ingredients such as orange and apple slices, toasted bread or toasted bread can be added to the omelet.
