1 bag dried white beans

1/2 cup Garlic (chopped).

1 pound ground turkey or chicken

1 cup chopped celery

1 tsp Oregano

1/4 cup olive oil

2 of each large green mild chilli (deseeded).

2 quarts chicken broth or water (to cover).

2 teaspoons Cumin

Sauté onions, celery and chilies for 10 minutes over medium heat. Then add half the chicken stock. Add salt, pepper, oregano, cumin, and simmer for 45 minutes. Next, add the rest of the chicken stock. Mix all ingredients in large pot with heavy bottom. Bring to boil, then simmer for 8 hours or overnight.

For a thicker chili, puree 1 cup of the beans and then serve. For a thicker chili, garnish with fresh cilantro and tarragon, or basil, chopped Tabasco peppers, or raw chopped Oso Sweet onionsOr hot sauce.
