APRICOT CHICKEN RICE SANTA REDUCTION

Servings: 6

1/2 cup lime juice

2 tablespoons vegetable oils

3 tablespoons honey

1/4 teaspoon ginger

Half a pound of boneless, skinless chicken breasts, cooked, and chopped

6 cups cooked Texmati Rice

1 cup chopped dried Apricots

1 cup thinly cut green onions

3/4 cup raisins

Combine the lime juice, oil and honey in a small bowl. Set aside.

Combine chicken, rice and apricots in a large bowl. Add onions, raisins, tomatoes, and rice. Allow to chill for about an hour.

Drizzle dressing over salad just before serving
