Poached U.S. Farm-Raised Fish with Fresh Mango Salsa

Makes 2 servings

Ingredients:

2 U.S. Farm Raised Catfish Fillets

Salt and pepper

For Poaching Liquid:

2 1/2 cups water

1/2 cup dry white wine

1 teaspoon whole peppercorns

2 cloves of garlic

1 bay leaf

4 to 5 sprigs herbs like rosemary, parsley, chives or tarragon

For Mango Salsa:

1 cup fresh mango, diced

1 cup fresh pineapple, diced

1/2 medium red onion, finely diced

1/2 jalapeno, finely diced and seeded

1 cup canned black bean soup, rinsed

Juice 1/2 of a fresh lime

1/2 cup grape tomatoes, halved

1 tablespoon chopped fresh cilantro

Salt and pepper to taste

1. Place all poaching ingredients into a sauté pan; bring to a rolling boil. Reduce heat to a simmer

2. Season the fillets generously with salt and pepper.

3. Place the catfish in the liquid. Cover and cook for about 4 to 5 minutes, or until the meat is tender and white.

4. Mix the ingredients in the salsa and season it to your liking.

5. Place the catfish on a platter and carefully remove it from the poaching liquid. Spread salsa on top of the fish.
