No Eek, No Squeak Cookie Cuties

Makes 36 cookies

Ingredients:

3 cups all-purpose flour

1/2 teaspoon salt

1 cup (2 sticks) unsalted Butter

3/4 cup sugar

2 teaspoons vanilla extract

1 large egg

12 cup California raisins, finely chopped

1/4 cup chopped natural almonds for the ears

4 30-inch black laces made of licorice, each cut into 4-inch lengths to make tails

3 ounces Semisweet Chocolate Mini Chips, for the Eyes

Directions

Combine the flour and salt in a small bowl. Set aside. Mix butter in a separate bowl using an electric mixer. Beat on medium-high speed for 2 minutes. Gradually add sugar to the butter mixture, beating for about 3 minutes. Mix in the vanilla extract, and then add the egg.

Reduce the speed and gradually add 1/3 of the flour until it is well mixed. Continue adding another third until the mixture is smooth. Mix in the chopped California Raisins. The dough should be half. Divide it into 2 disks. Wrap in plastic wrap. Chill for 2 hours.

Pre-heat oven to 350°F. Take 1 tablespoon of dough and roll it out in a circle. To create eye sockets, gently pinch the bridge of your nose. Two sliced almonds should be placed on top of each piece. Place two mini chocolates below the eyes and press them into the dough. Place the mice on baking sheets lined with parchment, spacing them 2 inches apart.

Bake for about 15-20 minutes, or until cookies are lightly golden brown. Place a wooden skewer approximately 1/2 inch into the mouse’s round end. To make a tail, remove the skewer. Allow to cool on rack. Cool cookies on rack.
