Regardless of whether it was your mom, grandma, or the Food Network, someone taught you how to bake. Many chefs know that parchment paper is the key to moist brownies, cookies and other sweet treats.

Are you thinking of parchment paper as a way to cook meats, seafood, soups and other foods? It is a versatile tool that can be used in many ways. You can use it in many dishes and require only the most basic clean-up. It doesn’t melt onto food, unlike plastic wrap and wax paper.

Baked Catfish In Papillotes

2 fillets of U.S. Farm-Raised Catfish

2 celery-ribs, cut into long strips

1 large carrot, cut into long strips and peeled

1 medium red onion, cut

1?4 cup olive oil

2 large sheets parchment paper

3 tablespoons of dry white wine

1 lemon, juiced

2 tablespoons clam liquid

1 large tomato, chopped (seeded).

1 teaspoon fresh thyme leaf

1 teaspoon chopped fresh dill

1 teaspoon fresh Tarragon, chopped

2 tablespoons chopped fresh parsley

12 teaspoon salt

12 teaspoon ground black Pepper

 

1. Preheat oven to 400 F. Heat a small pot of water to boil. Cook celery and carrots for 1 minute. Take out and place in a bowl. Lay on a towel to dry.

2. Make two sheets of parchment paper large enough to make a square 20 by 20 inches. Fold the pieces in half and lightly crease. Lightly brush each side with olive oil after folding the paper. Split celery, carrots, onion and place them in a small pile on one half of each paper. Each paper should have one fillet. To create a bowl-shaped vessel, fold the edges lightly.

3. Combine wine, lemon juice, and clam juice in a bowl. Make sure to coat each fillet in 3 tablespoons of the mixture. Sprinkle half of the chopped tomatoes over each fillet. Season with salt.

4. Place vegetables and fillet on parchment paper. Begin at the corner that is creased and fold the edges for about one-half an inch. Continue to fold the paper in tight, overlapping rows until you have created “papillotes.”

5. Place the papillotes onto a large baking sheet. Bake for 11 minutes, or until the bags are lightly browned and puffy.
