Baked Mediterranean Catfish

Ingredients:

4 U.S. Farm-Raised Fillets for Catfish

1 tablespoon olive oil

1 cup zucchini

1/2 cup red onions

2 minced garlic cloves

1/2 cup mixed Mediterranean olives, halved

1/2 cup grape tomatoes, halved

2 tablespoons chopped fresh basil

Capers: 1 tablespoon

1/2 teaspoon salt

1/4 teaspoon freshly ground pepper

1/2 cup crumbledfeta cheese, optional garnish

Directions

1. Preheat the oven at 450 degrees Fahrenheit

2. Heat the oil in a sauté pan over medium heat. Once the oil is hot add the zucchini, onion, and garlic. Cook the onions for five minutes or till they are translucent. Turn off the heat. Mix in the olives and tomatoes.

3. Lightly brush the catfish fillets in olive oil. Season them with salt and pepper. Place the fillets on a baking tray that has been lightly oil. Place equal portions of the vegetable mixture on each filet. Bake the fish for about 15 minutes, or until it flakes easily. Sprinkle with crumbled feta cheese before serving.
