In a world that is constantly changing, cognac makersTheir centuries-old traditions have been a source of pride for generations. It is no surprise that the Cognac region in France has seen brandy enjoy a revival among patrons of bars and restaurants of all ages, cultures, and regions.

“Cognac is really gaining ground with the recent cocktail renaissance hitting bars across the country,”Todd Appel is a Chicago master barman. “It is such a timeless and elegant spirit

— not to mention, it appeals to such a wide range of tastes, such as bourbon and scotch drinkers, whether ordered neat, on the rocks or in cocktails — that bartenders are turning to it more and more often.”

These are some things to remember when ordering cognac

* There are three grades of cognac: Very Special (V.S.), which is aged two years; Very Superior Old Pale (V.S.O.P.), which is aged four years; and Extra Old (X.O.), which is aged six years.

* The younger varieties (V.S. & V.S.O.P.) Cocktails are a better way to enjoy cognacs. Cognacs older and more mature are best consumed straight.

Why is this drink gaining popularity? Experts and spirit aficionados agree that this is due to the new varieties of amber liquids, which defy the perception that the drink should be enjoyed only in winter. Two of the most recent standouts are the aromatic CAMUS Elgance V.S. V.S.O.P. V.S.O.P.

For those who want a real treat, the CAMUS Pink Love cocktail, which Appel recommends, is a wonderful choice. It can be enjoyed before, after, and during dinner.
